Quinoa

I've discovered quinoa.

I'll never go back to boring grains again. More information here.

Here's today's recipe:

1 cup quinoa, rinsed thoroughly (or buy pre-rinsed)
2 cups water
1/2 red onion, diced
2 cloves garlic, diced
1/2 tsp cumin seeds
1 tsp olive oil
1 can chickpeas, drained and rinsed thoroughly
1/2 cup pumpkin purée
1/2 cup cilantro, chopped
1 Tbsp olive oil
Ground cumin, to taste
salt and pepper to taste
Chopped almonds (optional)

Combine water and quinoa in a small saucepan. Bring to a boil, reduce heat, cover, and simmer until water is gone.

While quinoa cooks heat 1 tsp of olive oil in a large skillet over medium heat. Add onion, 1/4 tsp each salt and pepper and cumin seeds and saute until onions start to soften. Add garlic and chickpeas and sauté until heated through. Remove from heat and stir in pumpkin and cilantro. Stir to heat through and combine. Combine vegetables, quinoa, and 1 Tbsp olive oil in a large bowl, stir to combine, and season to taste. I served mine sprinkled with almonds and with a giant leaf of Romaine that we tore apart and used to make little wraps. It was divine.
